Fresh and Zesty Nacho Tray

This is one of my favorite recipes in a pinch. If you have people coming over and little food in the house, this is a great snack to put in the oven 10 minutes before guests arrive, and it goes perfectly with a Mojito using my Lemon, Basil Syrup!

Preheat oven to 350 F and line a baking tray with aluminum foil. Start by spreading a decent amount of corn chips on the tray and sprinkle over some finely diced red onion. It’s already starting to smell amazing!

Scatter some of your favorite fresh salsa over the chips and cover with a mixture of mild cheddar and mozzarella. Use as much as you like, this recipe is completely tailored to individual taste!

Lastly, rip some cilantro and drop sporadically over the top. Pop the whole pan in the oven until the cheese has melted. You *do not* want the cheese to start bubbling, or it will harden when cool.

Again, scatter a few spoonfuls of fresh salsa over the top for some hot/cold contrast. Serve on large plate, voila!
